Cinnamon Plantain Waffles For the Toppings: add an array of toppings of your choosing. For the avocado topped waffle, layer the sliced avocado, salt and pepper to taste and sprinkle with sunflower and sesame seeds. Drizzle olive oil and a squeeze of lemon juice to taste. Recipe
• 1/ 2 plantain
• 1 egg
• 3 egg whites
• 1 tablespoon coconut flour
• 1 scoop protein powder (of choice)
• 1/ 2 teaspoon baking soda
• 1 teaspoon cream of tartar
• 1 teaspoon cinnamon
• For the toppings
• 1/ 2 small avocado, sliced
• Pumkin or Sesame seeds
• 1 teaspoon juice of a lemon
• 1 7 minute, boiled egg (jammy)
• 1/ 4 cup arugula
• pinch of red chili flakes
